Description:

Peach
concentrate is a clean, sound, wholesome product which is manufactured from
fresh, mature cling peachest. The fruit is properly washed, sorted if
extraneous material, chopped, screened and evaporated to obtain 32%
Natural Fruit Soluable Solids (NFSS) product.
Peach concentrate produced is
processed and packaged in accordance with current Good Manufacturing
Practises. The finished product shall conform in all respects to the
current USDA standards for fruit concentrate, to the provisions of the
Federal Food. Drug, and Cosmetic Act, and to all applicable state and local
laws.

Analysis:

Color
|
Bright, light
yellow to orange yellow typical of fresh peaches. USDA Grade A
Color Score Points: 45-50
|
|
Consistency
|
Product consistency
shall be determined by a bostwick measurement of 12% )+0.1%) NFSS @ 20
degrees C (+/- 0.1 degree C) for 30 seconds. The bostwick shall be
in the range of 8.0 to 17.0 cm dependent upon seasonality.

Finish
and Defects
|
Product
sjhall be typical of fine finish peach concentrate. The concentrate
shall be smooth, nearly free from defects which do not seriously affect
the overall appearance of the product and shall meet or exceed the USDA
defect standard for grade A. Defect Score Points: 45-50
|

Flavor
|
Fresh,
wholesome, distinct flavor characteristic of good quality peaches.
Product shall be free from green, bitter, scorchede, burned, caramelized,
or other undesirable flavor.

Product is
aseptically processed under hot "break" conditions.

concentration shall be determined by a Natural Fruit Soluble Solids
measurement via refractometer. Product shall average 32% NFSS with
individuals not less than 31.0% NFSS and not to exceed 34.0% NFSS.
