Diced Tomatoes

Description:

Red ripe tomatoes are washed, sorted, and peeled.  After dicing they are sorted again for color and defects.   The dices are subject to a calcium chloride and citric acid tratment prior to cooking for firmness and pH control.

Distinct tomatoe taste, typical of fresh ripe tomatoes.

Distinct tomatoe aroma, characteristic of good quality fruit.

Color:

Typical red for canned tomatoes in compliance with U.S.D.A. grade points.

3/4" x 3/4" x 1

Dice:

Firm, good definition, proper size.

Defects:

To comply with U.S.D.A. choice requirements.

Grade:

U.S.D.A. choice (not less that 85 points)

pH:

Range of 3.8 to 4.0

Fill weight:

80% dice at time of fill.

Container to be sterile 55 gallon, enamel lined drum.
